Serves 2:

Ingredients:

2 large tomatoes, chopped or 12 cherry tomatoes, whole

4 romaine or cos lettuce leaves, cut fairly large

1 handful rocket leaves

1/2 cup raw broccoli florets (optional)

2 cups baby spinach

6 strawberries, quartered

1/2 cup organic chickpeas, tinned (low salt or rinse well)

1 large carrot, grated or chopped

1 avocado, sectioned

1/4 red or green capsicum, cut into strips

1/2 red onion, sliced

1/2 cup walnuts, chopped

Method:

Place all ingredients in a salad bowl and drizzle over the Cashew nut salad dressing (found in the “Dressings and Sauces” section).

A great kid’s lunch for those who like salads. Simply remove the bits they don’t like at the moment.
