Serves 6-8

Ingredients:

Filtered water (about 1L or thereabouts)

1 large broccoli bunch, chopped

4 large carrots, chopped

1 cup Kent pumpkin, chopped

kernels from 2 cobs sweet corn (cut from the cob)

1 large zucchini, chopped

1 clove garlic, diced

1 x 400ml tin chopped tomatoes, or 2 tomatoes, chopped

1 cup raw cashews

ground peppercorns and a high quality rock/sea salt to season (no refined salt please)

Method:

Place all ingredients except the cashews in a slow cooker or large saucepan. Cover by about 1 inch with water and cook as slowly as possible until vegetables are tender. Add the cashews for the last 30 minutes or so. Blend the mix with a hand blender if you wish.
