This is a unique concoction which is very healthy and really tasty. It is really a super-thick green juice but, given my first experiment resulted in needing a spoon, I thought an “iced soup” was an appropriate direction to take this recipe. Maybe it will catch on!

It is also a favourite with toddlers, but remember that spinach may only suitable for kids who are 12 months old and most other ingredients are suitable from 7 months. Please do your own research as their is much conflicting opinion. Use organic spinach which are likely to have less nitrites from poor fertilizer. Our bodies convert these to nitrates which can be harmful to young babies.

6 – 8 Serves

1 pear, quartered with seeds removed (you can use an apple if you don’t have a pear)

1/2 avocado, seed removed

2 bananas (best results come from over-ripe frozen bananas, chopped with the skin removed)

5 pitted dates

100g (approx. 4 oz) baby spinach (or do a 50-50% blend with kale which works well also)

1 small piece of broccoli (about the size of your thumb or equal to 1/4 cup)

3/4 cup water (try and use alkaline water)

4 strawberries or 1/4 cup pomegranate juice

1 tsp dandelion root powder (optional)

Blend all ingredients in a high powered blender until creamy. Serve in a bowl and enjoy your “iced soup”!

TIP: If you have trouble getting the blender to mix your dates, simply quarter them and cover them in boiling water for a couple of minutes. Drain off the water and add the dates and they will be much softer and blend easily.
