Serves 2

Ingredients:
  • 1/2 cup quinoa, soaked overnight and rinsed
  • 1/2 cup water
  • 1/2 – 1 cup oat milk or almond milk (depending on how much milk you like)
  • 1/2 tsp cinnamon
  • 2 Medjool dates, pitted and finely chopped
  • 1/3 cup blueberries
  • 2 Tbsp goji berries
  • 2 tablespoons raw peacans or walnuts, coarsley chopped
Method:

Soak the quinoa overnight so it sprouts a little, then rinse thoroughly and place in a saucepan. Bring the quinoa and the 1/2 cup water to the boil and begin cooking. Once the water is drained off add the oat milk, dates and cinnamon to a boil. Reduce the heat, cover and simmer for about 5 minutes. Add the blue berries and goji berries and simmer for another 5 minutes or so. Mix in the chopped nuts and serve.
