Serves 4


1 cup broccoli florets, chopped

2 medium carrots, julienne

1 large zucchini, julienne

1 cup snow peas, halved

1 cup baby spinach leaves

2 organic chicken breasts, diced (optional)

1/2 cup raw cashews

2 cups wholegrain brown rice

1 Tbsp organic coconut oil

2 Tbsp seasoning or soy sauce (I use Niulife organic coconut amino sauce – non-soy all purpose seasoning)

Cook the brown rice as per instructions.

Put the coconut oil in a large wok and heat. Add the chicken and cook until tender. Add the carrots and seasoning and cook for 5 minutes. Add all other vegetables and stir fry until tender. Add the spinach leaves and cashews at the very end stirring for one minute and then serve.
