This is a really rich and tasty smoothie which is one of the few ways I know of where you can eat raw pumpkin! Using a lightly steamed pumpkin in this smoothie as well may even be nicer, depending on your preference and time.

Serves 2-3

Ingredients:

1 cup raw butternut or Kent pumpkin pieces, skin removed (or steamed pumpkin) *

2 bananas, cut into quarters and frozen

1/4 cup raw walnuts or cashews (or blend of both)

4 pitted dates, chopped

2 cups kale or baby spinach

2 cups of oat milk or coconut milk (any non dairy milk will do)

1 cup ice (if not using frozen bananas)

1/4 tsp nutmeg (optional for some extra spice)

Method:

Place all ingredients in a high powered blender and puree.

* Note: This is a great recipe for raw food lovers. It does taste a little different when you have steamed the pumpkin prior to blending, but both are very yummy.
