Makes approximately 3 litres:


2 kg ripe plums

1 kg apples, cored (or large tin unsweetened apples)

750 grams pitted dates

1 litre brown vinegar

1 tsp chopped fresh ginger

2 cloves garlic chopped

1/2 tsp cayenne pepper

1 tsp black pepper

1/2 tsp ground cinnamon


Remove plum seeds. Put all ingredients into saucepan and bring to boil, simmer uncovered 1.5 hrs. Blend until smooth; or seive to remove extra pulp. Pour into jars while hot and seal.  Makes 6-8 jars (about 3 to 3.5 litres).

Great with oven roasted vegetables.
