Serves 2:

Ingredients:

2 bananas, peeled

4 pitted dates, finely chopped

1 Tbsp shredded coconut

1 Tbsp virgin coconut oil

Method:

Preheat the oven to 180 degrees (350F). Place the coconut oil in a small bowl and ensure it is liquid (heat if necessary). Add the shredded coconut and chopped dates to the oil and mix well. Cut the bananas about 3/4 through so they open up at the top. Spoon the ingredients into the banana and bake for 20 minutes or until tender.

Serve as is or with a serving of dessert cream.
