Serves 2:


50g baby spinach (about 3 cups)

3 cups cos or romaine lettuce, coursely chopped

3 mandarins, seeds and skins removed and sectioned

1/2 small red onion, chopped

4-6 pitted dates, chopped into quarters

1 avocado, chopped (optional)

1/4 cup of mixed seeds (pine nuts, pumpkin seeds, almond slivers, sunflower seeds)

1/4 cup olives (optional)

For the dressing:

juice from 1/2 a lemon (or a lime)

3 Tbsp balsamic vinegar

2 tsp Dijon mustard (must be sugar free)

1 tsp ground peppercorns


Place the greens in a bowl and add the mandarin pieces, onion, dates and avocado. Toss gently. Mix up the dressing in a separate bowl and then pour over the salad. Lightly roast the seed mix in coconut on a pan for about 60 seconds and remove them just before they start browning. Place them on the top of the salad and serve.
