2 ripe avocados, with skin and seed removed

1/2 cup of fine diced onion

1/4 cup coriander, finely chopped

2 Tbsp fresh lime juice

1/4 tsp ground cumin

1/4 tsp freshly ground black peppercorns

raw vegetables to dip – celery sticks, zucchini, carrot sticks, cherry tomatoes and broccoli


Put all ingredients in a food processor until creamy. If you are doing by hand, mash the avocados in a bowl with a fork and then add all other ingredients (except the dipping veges) and stir well. Cover and refrigerate.

Enjoy your guacamole on a piece of wholegrain pita bread or organic seed bread or with some raw carrots, celery sticks, broccoli and cherry tomatoes.
