I often search for a really easy and quick lunch that is also healthy. This “fits the bill” and is a good side dish with a meal as well. Natural flavours carry this on its own.

Ingredients:

1 fennel bulk, stalks and greens removed

1 Tbsp organic coconut oil

ground peppercorns

Method:

Cut the fennel bulk into strips. Fry in coconut oil for about 7 minutes until just starting to brown. Add the ground peppercorns at the end of the process. You can also drizzle the juice from half a lime as well if you wish.

You may also wish to just cook the fennel and eat with our creamy sesame dressing and some salad items – superb!
