2/3 cup unhulled sesame seeds

1 cup unsweetened almond milk or oat milk

2 Tbsp rice vinegar (or white wine vinegar or Dr Fuhrman’s Riesling Raisin Vinegar)

1 tsp toasted sesame oil or organic coconut oil

7 dates, pitted (soaked in 1 cup water for 30 minutes – reserve the soaking water)

1 small clove garlic


Lightly toast 2 Tbsp of sesame seeds in your 1 tsp of oil on medium heat for about 5 minutes, ensuring they don’t burn.

In a high powered processor or blender, blend all ingredients except for the fried sesame seeds and reserved soaking water (from the dates). Once creamy add an amount of the soaking water until your texture is as you want it. Then stir in the fried sesame seeds and you are ready to serve on your favourite salad.
