10 medjool dates, pits removed

2 cups of cooked black beans (or 1 can (400g), juice removed)

3 bananas, sliced

2 cups fresh or frozen organic strawberries (thawed if they were frozen)

2 Tbsp ground flax seeds (or linseed)

2 Tbsp chia seeds,

2 eggs

3/4 cup cocoa or cacao powder (I like dark cocoa powder personally)

1/4 cup coconut flour

1 tsp sodium bicarbonate

1 tsp cream of tartar (optional if you want them to raise a little)

1 Tbsp vanilla extract

1/2 cup walnuts (optional if you like a nuttier texture and taste)


Preheat oven to 180 degrees (350F). Place all ingredients into a food processor and mix until creamy. Grease a 12-cup muffin pan with organic coconut oil or place cupcake paper cups and using a spoon, scoop in batter in equal parts. Bake for 25-30  minutes. If you like some texture you could leave the nuts out of the processor and stir into the mix just before you add to the muffin pan.

Note: if you used frozen strawberries you will need to allow to thaw and drain off the juice. You may want to add them to the mix later as shown below.

As a dessert, alternative serve with some coconut cream and fresh berries.
