This is a great little sugar-free and dairy-free recipe. Enjoy with fresh berries or with our raw cheesecake.

Ingredients:

1 ripe avocado

2 x 270mL cans of coconut cream (the quantity of cream isn’t that critical)

3 Tbsp raw cocoa powder (always go with high quality, natural cocoa)

1/2 tsp stevia powder

1 tsp vanilla extract (do not use vanilla essence but go with a good quality vanilla bean extract)

4 dates, finely chopped

Method:

Place the coconut cream in the refrigerator overnight or in a freezer for 1 hour. Add all ingredients to a good quality blender or high powered food processor and blend until creamy. The hardest part of this is processing the dates, so if your blender struggles to do this, just chop them very finely before adding them to the blender.

Allow to set in the refrigerator for 20 minutes and serve with fresh berries.
