This is a great tasting recipe for a hot chili sauce which is sugar free.

Makes 1/2 cup of hot sauce!

Ingredients:

1/4 cup organic virgin coconut oil

2 – 4 cloves garlic, minced (however you like it)

2 shallots, chopped

1 tsp dry chillies, crushed (or use cayenne pepper if you don’t like chili) or use fresh chillies, chopped finely

1/2 tsp shrimp paste (if you have it)

1 tsp tamarind paste

1.5 Tbsp lime juice (from 1/2 a small lime)

2 Tbsp water

1/4 cup white vinegar

1 tsp coconut syrup (or you could use agave or a natural sweetener)

Method:

Put the coconut oil in a frying pan and heat. Add the garlic and shallots and reduce heat. Lightly fry for about 2-3 minutes and don’t let the garlic go brown and hard as it goes bitter. Remove from heat and remove the contents from the oil and set aside in a bowl. Then add the crushed chillies, tamarind paste, shrimp paste, lime juice, water, syrup and vinegar and mix well. Return your mix back to the oil and heat again until consistent in texture.

It is desirable that you can still recognise the ingredients in the sauce. It is a hot sauce so will go a long way.
