Ingredients:

1/4 cup chia seeds

1/4 cup shredded coconut

1 cup almond milk or other nut/oat milk

4 dates, pitted

1/4 cup goji berries

1 tsp vanilla extract

1/8 tsp powdered ginger

1/8 tsp cinnamon

1 tsp maca powder

1 tsp cacao nibs or powder

Method:

Place whole chia and shredded coconut into a bowl. Put the almond milk, dates, goji’s, spices and vanilla in the blender and mix until smooth. Pour the blended milk over the chia seeds and dessicated coconut, stir and let sit for 10-15 minutes, or overnight in the refrigerator. The pudding will have a slight crunch after 10 minutes, but will be soft and smooth the next day. Will store for 4-5 days in the refrigerator.

Serve cold or at room temperature, topped with fresh blueberries or blackberries, if desired.
