Chia seed bar
This is a moist raw treat that is great for a snack or lunch box.
Ingredients:
1.5 cups raw nuts (walnuts, almonds, brazils work well)
1.5 cups Medjool dates, pitted
1/2 cup desiccated coconut
1 tsp vanilla extract (not essence)
1 tsp cinnamon powder
2 Tbsp chia seeds and 1/4 cup filtered water
Method:
Place the 2 Tbsp chia seeds in a bowl or cup with the water and mix. Let stand for about 5 – 20 minutes or until set firm.
Put all other ingredients in a food processor or high powered blender and process. Once mixed, add the chia seed gel and process again until consistently mixed.
Put some baking paper in a dish to stop sticking and the put the mix on the paper. Flatten it down as best you can – it is quite sticky. Place in a refrigerator until set. Initially it is quite moist but it will set firmer after a few hours.
