Serves 4


3 bunches bok choy

1 Tbsp soy sauce, low salt

2 cups shiitake mushrooms, chopped (optional)

2 cloves garlic, finely chopped (optional)

1 Tbsp unhulled sesame seeds, raw or lightly toasted


Cover the bottom of a large pan with about 0.5 – 1cm of water and add the bok choy. Drizzle over the soy sauce and cover and cook on high heat for about 6 minutes. Remove the bok choy and add the mushrooms and garlic to the liquid. Simmer until it is reduced to a glaze and then pour over the bok choy.

Serve with raw or lightly toasted sesame seeds.
