1 ripe banana

1 cup of oats (best to use natural rolled oats, not quick oats)

1 cup of blueberries, fresh or frozen

1/4 cup of raisins or sultanas or finely chopped figs

1/8 cup of pomegranate juice (or water if you don’t have it)

2 Tbsp of chopped pitted dates

1 Tbsp of chopped walnuts

1 Tbsp of goji berries (if you can find them in your health food store)Blueberry slice

1 Tbsp of raw sunflower seeds

2 Tbsp of ground flax seeds (or linseed)

Preheat oven to 175 degrees (350 degrees F). Use a fork to mash the banana in a mixing bowl. Then add all other ingredients and mix well. Wipe a small 8 inch square baking tray with coconut oil and spread the mixture across the base evenly so it is about 10mm thick. Bake for 25 minutes and then remove it to cool on a wire rack.

Eat it warm or put in the fridge for a great kids snack or breakfast on the run.
