  • 1.5 cups of blueberries (fresh or frozen)
  • 1/2 cup raw cashews or 1/4 cup of raw cashew butter
  • 1/2 cup of pomegranate juice
  • 3 tsp balsamic vinegar (sugar free)
  • 2 dates, pitted
  • 1 Tbsp goji berries (optional but worth the effort)
  • 1/2 cup water (or appropriate amount to make the dressing slightly runny)
Put all the dressing ingredients in a high powered blender and pour over your ‘technicolour’ dressing on any salad or vegetable salad you desire. I suggest it is a great addition to a pumpkin salad. Season with ground peppercorns if you desire.
