5 beetroot, washed – cubed and steamed (skins on or off – whatever you prefer)

1 cup raw cashews

1-2 cloves garlic

3 large chilis (mild spice)

juice from 1 small lemon

1 tsp cumin seed, ground

1/2 – 1 tsp ground coriander

1 tsp paprika

1 tsp ground peppercorns

1 tsp cinnamon


Remove the stems and ends from the beetroot and wash the skins. Chop into cubes and steam until very soft. Once cooked, set aside until cool. Place all the beetroot and all other ingredients into a food processor or high powered blender until it is a reasonably smooth texture.


This is a great dip or sauce for any meal. It goes well with raw veges like carrot and celery as a snack or makes a great filler for a kids wrap or crepe filling.
