Prepare your crepe mix from our basic crepe recipe or buckwheat crepe recipe.

Serves 1:


1/2 banana, sliced

1/4 cup of fresh blueberries

4 pitted dates, finely chopped

2 Tbsp coconut cream, preservative free

1/4 cup of mixed seeds and nuts (such as pumpkin seeds, sunflower seeds, pine nuts etc)

1 Tbsp of our homemade dipping chocolate (optional)


Spoon the dipping chocolate onto half the crepe (if using it). Then spoon on half the coconut cream, reserving the other half to complete. Slice the banana and place over half the crepe and add the blueberries into the crepe and around the edge of the crepe. Fold the crepe over the banana and add the final coconut cream to the top and serve.

As an alternative, you may wish to quickly heat all the fruit ingredients in a pan (particularly if you are using frozen blueberries) and have a hot filling.
