This is a fantastic recipe which has evolved over much experimentation among a few of us in the Fruit Loop Community. It is a real favourite of mine. Please don’t judge this one from the ingredients – try it and then make your decision! It is easy to make a big double-batch and keep in the fridge for up to a week.

Serves 2-4, served hot or cold:

1 large beetroot (or two small ones), peeled and grated/ processed

1 cup of fresh or frozen blueberries (or blackberries)

4 large strawberries (or use 1/2 cup of raspberries)

1 large banana, sliced (frozen bananas work best)

3/4 cup raw organic quinoa, rinsed and soaked OR try 1 cup raw buckwheat, soaked OR rolled wholegrain oats (not quick or instant)

1 cup water

1/4 cup chopped walnuts

1/4 cup raisins or sultanas

4 pitted Medjool dates, finely diced

1/4 cup raw mixed seeds (sunflowers, pumpkin, linseed etc)

2 Tbsp organic goji berries

2 Tbsp Incan berries (optional)

1 tsp cinnamon

1 tsp maca powder (optional)

Method:

Soak your quinoa for as long as you can, although it is not essential. If using buckwheat, soak overnight and rinse at least 3 times to get rid of the starchy purple water. Put the soaked quinoa, buckwheat or oats in water in a saucepan and bring to the boil and  simmer until cooked. Add the grated or processed beetroot and chopped dates and raisins. Then add the banana, all the berries, cinnamon, maca powder and stir well and cook for about 5 minutes. Finally add the chopped walnuts and seeds and mix together. Simmer for 1 minute and serve.
