Makes 2:

Ingredients:

4 asparagus stems, chopped

3 eggs

1/2 red onion (or brown is ok), finely diced

Ground peppercorns

Method:

Cut your asparagus into sections and dice your onion. Add the eggs to the bowl and whisk. Lightly grease your frying pan with coconut oil and pour in some mix. Once browning underneath simply fold one half over on the other so the filling will continue to cook.
