Makes 7 muffins:

Ingredients:

1/2 cup raw linseed soaked in 3/4 cup water for 10 minutes until gelatin (or use 5 eggs)
3 apples, peeled, cored and processed (this is your applesauce)
½ cup coconut flour
2 Tbsp cinnamon
1 tsp baking soda
¼ cup coconut oil
5 Medjool dates, pitted

Method:

Place the 1/2 cup of linseed in a bowl and add the 3/4 cup of water. Soak until it is gelatin.

Remove the cores and skin from your apples and place the apples in a food processor. Add the 1/4 cup of coconut (liquid or solid) and the 5 pitted dates and process until forms a thick, sweet sauce.

Now add the baking soda, cinnamon and the linseed gelatin mix and process until well mixed.

Grease a muffin tray with coconut oil and add your mix. It will rise about 10-20mm in the tray.

Cook for about 20-30 minutes at 180 degrees C or until cooked through. Allow to cool and carefully remove.

Variations worth trying:

  1. Reduce the applesauce and add an overripe banana before blending. Mix in 1/2 cup toasted chopped nuts (like walnuts) by hand.
  2. Add 1/2 cup blueberries or raspberries
  3. Add 1/2 cup chopped apples for a little crunch
  4. Add 3 T of cocoa powder
