Contrary to the funny, popular meaning of “liquid lunch”, my lunch is full of protein and healthy fruit which I enjoy from a glass – just not a schooner!

Ingredients:

1/2 cup of quinoa, cooked (if you don’t know how, use the quinoa porridge technique in “Breakfasts”)

1/2 cup blueberries (fresh or frozen)

5 medium strawberries

1 banana, chopped and frozen

1 cup almond or oat milk or try homemade coconut milk (avoid brands with vegetable oils in them)

1/4 cup cashews or walnuts

1/4 cup brazils (optional)

Method:

Put all ingredients into a high powered blender and use ‘pulse’ function to crush the ice. Once done, puree until smooth and creamy.
