Serves 2


1 ripe avocado, peeled and pitted

1/2 mango, diced

1/2 cup cucumber, peeled and diced

1 tomato, diced

1 Tbsp lime juice

6 romaine lettuce leaves


Mash avocado in a bowl. Stir in mango, cucumber, tomato and lime juice. Spread onto a lettuce leaf and roll into a wrap.

Note: This dish doesn’t keep as well and is best eaten fresh for maximum taste enjoyment.
