Ingredients:

2 cups cauliflower, chopped

1 1/4 cup unsweetened almond milk or oat milk

1 cup cooked white beans

1/2 cup raw cashews

1 large shallot

Juice from 1/2 lemon

3 cloves garlic

ground peppercorns to taste

3 tbsp organic coconut oil

red pepper flakes (optional)

Method:

Add cauliflower to pot of boiling water and boil until tender (or steam it).

Add 1 tbsp coconut oil, sliced shallot and chopped garlic cloves to a pan. Heat until tender. Add almond/ oat milk, beans, cooked cauliflower, raw cashews, shallot, garlic, lemon juice, remaining 2 tbsp coconut oil to blender and blend until smooth.

Serve over steamed greens or mix with an egg noodle or rice noodle
